EGGPLANT LASAGNA

This may not be totally Dukan, but fairly close.

3 good sized eggplants
1 lb. lowest fat hamburger (I use 94/6% fat)
canned spaghetti sauce
3 cloves garlic
medium onion, chopped
mushroom, 8 oz, sliced
Italian seasoning
16 oz container of FF cottage cheese
8 oz package of FF mozzarella cheese
1 egg


The "Noodle" layer:
Peel eggplant, slice longways into 1/2 inch strips. I sprinkled mine with salt, sprayed generously with pam and fried the strips, 2 1/2 minutes on each side.

Sauce layer:
Brown hamburger, onion, mushrooms and garlic. Add spaghetti sauce, set aside.

Cheese layer:
In a bowl, mix cottage cheese, 2/3 of the mozzarella cheese, egg and about 1 tablespoon of Italian seasoning.

In a 9x13 pan, layer: "noodles", cheese mix, sauce mix. Repeat 2 more times. Sprinkle remaining cheese on top. Bake for 30 minutes at 350 degrees. Take out of oven and let sit for 10 minutes before cutting.
